Farmers Market Treats

Oh, I adore a Farmers Market!  It’s such a great way to support local farms and also a way to get some fabulous food!

Madeira, OH has recently started up a small farmers market - which is where I purchased the above goodies: corn, onions, zucchini, pepper, onions, and granola. 

It’s a small market, but they have some great booths and have some fun items beside the norm such as lavender bath products, organic doggie treats, granola mixes, bakery goods, and local art.

Saucy~ chicken stir fry

I love making stir fry because it’s such a good way to use leftovers.  I had leftover chicken breast, rice, and veggies – so in to the pan they went!

The key to good stir fry is having a good sauce to accompany it.  Now, I love just about all Chinese / Thai / etc… sauces, but a few I commonly use are peanut sauce, hoisin, and plum sauce.

First, I marinated my chicken with a little olive oil, garlic, and soy sauce.  Then I cooked it, cut it in bite size pieces, and set aside.

Next I sautéed any veggies I could find in my fridge, including: leeks, onions, broccoli, mushrooms, and garlic.

Once the veggies were cooked, I added rice, chicken, and my sauce (I mixed all 3 of the above).  Next, I cracked in an egg and lightly scrambled it in the pan as it cooked.

My final step was to plate and crumble over some peanuts and cashews.  So good!

Chocolate Cake… but better!

Oh, I had a hankering for chocolate cake today!!  Whenever I make anything “from the box”, I always try to add a little something special to make it my own (and to make it seem more homemade).

My additions to store bought chocolate cake mix are super simple.  Make the cake per the box directions, THEN ADD:

  • a cup of sour cream (trust me)
  • 1/3 package of instant chocolate pudding mix (trust me again)
  • 1 teaspoon of almond extract
  • either mini chocolate chips or shavings of semi-sweet chocolate squares (enough for personal preference) 

Just those small changes make a world of difference!

And just in case you were wondering – yes of course I scrape the bowl and lick the spoon.

Cookbook Treasure

I grew up with some fabulous cooks in my family – my mom, dad, and grandmother – they were all amazing!

My dad and grandmother were “make it up as it goes” cooks, whereas my mom really went by the recipe book.  As different as they were, the food was always spectacular.

My mom used a lot of recipes from the Better Homes and Gardens Cookbook, and I recently purchased a vintage copy to have as well. 

I find so much pleasure in writing notes, edits, etc.. in a cookbook so that I can remember the wonderful meals I’ve experienced throughout the years.  This cookbook is a treasure I hope to pass on some day!

Better than the box cornbread!

I made a small tweak to a regular cornbread mix by adding a half can of creamed corn and… OMG – it was SO good!!

The bread was moist and delicious, and had flavorful nuggets of corn throughout.  You have to try it!

Finally, I topped the cornbread with pads of butter.  This was delicious, but when I make this again, I think I’ll melt the butter first and pour it over the top of the mixture instead so the buttery taste is in every bite!  Paula Dean be proud  :)
